Idiyappam Mavu


Preparing idiyappam mavu is similar to preparing rice flour. Only one step is extra that is you have dry roast the flour before you make idiyappams.

Ingredients:
1 kg Raw rice

Preparation:
1. Wash the rice and soak it for 30 minutes. Drain the rice and spread it on a cloth for shade drying. 2. Grind the rice to a smooth powder using mixer. Take 1 cup at a time and run it and stop in intervals. Too much rice will bog down the motor and cause over-heating.
3. Pass it through a sieve to get the fine powder. And grind again until you get the most of your rice into fine powder.
4. Heat kadai on a low flame and dry roast the flour.
5. Allow it to cool and store it in an air tight container.

Rice flour

Ingredients:
1 kg Raw rice

4. Store it in an air tight container.

Murukku Mavu

I love to make murrukku but I always bring flour from my mother when ever i visit to my mom's place. Finally I learnt from her and posting the recipe for u...

Ingredients:
4 cup Raw rice
1 cup Urad dal

Preparation:
1. Wash the rice and soak it for 30 minutes. Drain the rice and spread it on a cloth for shade drying.
2. Dry roast urad dal on low flame till it becomes golden brown color.
2. Grind the rice and urad dal to a fine powder using mixer.
3. Store it in an air tight container.

Pottu Kadalai Podi/ Fried Gram Dal Powder

Pottu kadalai podi is good for health. You can give to kids when they play for long time...it gives them lots of energy. It is good for health. Also you can use this when you want make pottu kadalai urundai/ laddu.

Ingredients:
1 cup Pottu Kadalai
½-1 cup sugar (according to taste)
½-1 tsp Cardamom powder

Preparation:
1. Grind pottu kadalai and sugar separately to a fine powder.
2. Mix sugar, pottu kadalai and cardamom powder.
3. Store it in an air tight container.

Sathu Maavu Podi (Sathu Maavu Powder)

Sathu Maavu Powder is made out of grains, nuts, dals and it is rich in protein. Sathu maavu powder is used to prepare kanji. It is a drink that keeps you full and healthy. I learnt this recipe from my mother and posting it for u………

Ingredients:
250g Ragi (Millet finger)
250g Red Rice
250g kambu (Millet pearl)
250g Green Gram (Pachai Payaru)
150g Barley
150g Jawarisi (Sago)
100g White Soya
100g Corn
100g white corn
100g Pottu Kadalai (Roasted Gram Dal)
100g Nilakadalai paruppu (Peanuts)
50g Cashew nuts
50g Almonds
10 Cardamoms
20g Dry Ginger

Preparation:
1. Dry roast all the ingredients one by one on low flame except dry ginger and keep it aside.
2. Allow it to cool and grind it to a fine powder.
3. Store it an air tight container and use whenever required.

For Preparing Sathu mavu kanji:

1. Mix 2 tsp flour with ½ cup of water and mix well.
2. Heat the above mixture on low flame and cook till the mixture thickens (stir in between to avoid sticking).
3. Add a cup of milk and sugar to the above mixture and mix well.
4. Sathu Mavu Kanji is ready to serve.

Garam Masala Powder

Ingredients:
1½ tsp cumin seeds
1/2 tsp pepper
4 Cardamom
3 cinnamon sticks
1 Bay leaf
1/2 tsp cloves

Preparation:
1. Dry roast the above ingredients on low flame till they turn aromatic.
2. Grind them together in to a fine powder.
3. Store in a air-tight container and use whenever required.

Note:
1. Don't roast ingredients on high flame the spices will burn.

2. You can make a larger quantity of this by using the above ingredients in the same ratio.

Chilly Powder


One of the easiest ways to bring a dish to life is adding a dash of chilly powder. This is used extensively in India compared to other countries for the preparation of dishes. It is very easy to make homemade chilly powder.

Ingredients:
1 kg Red chilly (dry)

Preparation:
1. Keep it is the sunlight for 1 or days to get dried.
2. Once red chilly got dried grind it to fine powder and store it in an air tight container.

Note:
An electric spice mill is your best tool for making chilly powder.

Sambar Powder

Sambar Powder is an important ingredient in south Indian dishes. It is used in many south Indian dishes. Even I was thinking of posting this recipe for long time. Finally i learnt from my grandma and posting this for u.

Ingredients:
1kg Coriander seeds
750g Red chilly
50g cumin seed (jeera)
1tsp Channa dal
1tsp Mustard seeds
1tsp Fenugreek seed (methi seed)
2-3 Turmeric or 2tsp turmeric powder
2 tsp Rice
Few curry leaves

Preparation:
1. Take a heavy bottom vessel (kadai).
2. Roast the above ingredients one by one including curry leaves in a low flame without oil.
3. Mix all the ingredients and grind it into a fine powder.
4. Store sambar powder in an air-tight bottle and use whenever required.

Idly Milagapodi /Idly Podi

Ingredients:
1/2 cup Kadalai parupu (Channa dal)
1 cup Urud Dal
10 Red chilly
5 Garlic Pods
1 tsp Sesame seed
1 tsp Asafetida
Few Curry leaves
Salt

Preparation:
1. Heat a kadai, dry roast kadala paruppu, urud dal, red chilly, sesame seed, curry leaves one by one and keep it aside.
2. Once the ingredients are cooled, add asafetida, garlic and salt.
3. Grind them to a coarse powder and store it in an air-tight container.
4. Serve with idly/dosa.
