Vegetarian Lasagne

Vegetarian Lasagne is a simple and healthy Italian dish. It is a rich dish with thick gravy and cheese flavored with Italian herbs and layered with veggies and noodles.

8-10 Lasagne noodles
2 cup Tomato Puree
3 Garlic Cloves, finely chopped
1 Carrot, sliced
10 beans, finely chopped
1 medium size zucchini, sliced
½ cup sweet corn niblets
2 onion, finely chopped
8 mushrooms, sliced
2-3 tsp chilly flakes
2 tsp oregano
2 tsp basil
4-5 tsp grated mozzarella cheese
2 tomatoes, slices
Pepper, according to taste
White sauce
2 tsp Oil

For the white sauce
1½ tsp butter
2 tsp All purpose flour
1/2 liter Milk
1 tsp pepper
1/2 tsp salt

1. Heat oil in a pan; add chilly flakes, onion, garlic and saute till the onion becomes light brown.
2. Add mushroom and stir fry for 2-3 minutes.
3. Add carrot, beans, zucchini, sweet corn niblets and saute for a minute.

4. Add oregano, basil, pepper, salt and mix well.

5. Finally add tomato puree and cook it on low flame for 10-15 minutes.

6.In the mean time you can prepare white sauce.
For the White sauce:
a. Melt butter in a heavy vessel, add flour and whisk for a minute.

b. Add milk gradually and whisk constantly until the mixture thickens.
c. Add salt, pepper and mix well.

7. Grease the baking pan with butter.
a. Pour the white sauce and spread it with a spoon.

b. Place the lasagne sheet over the white sauce.

c. Then spread the vegetable mixture and pour white sauce over the vegetable mixture and place the lasagna sheet/noodles.

d. Repeat this to make 2-3 layers.
e. Finally pour the white sauce over the lasagne sheet .

f. Place the sliced tomatoes over the sauce and sprinkle grated mozzarella cheese and oregano.

8. Preheat the oven at 200 degrees c and bake it for 30-35 minutes.
