Kathrika Murungai Kaai Kootu

2 Drumsticks
4 Brinjal (Kathrika)
2 Potatoes
1 Onion, finely chopped
2 Tomatoes, finely chopped
1 tsp Sambar Powder
2 tsp Chilly powder (vary according to taste)
1-2 cup(s) Water
½ tsp Mustard Seeds
½ tsp Urud Dal
¼ cup Coconut
½ tsp Tamarind paste (optional)
¼ tsp Turmeric powder
2 tsp Oil
Few curry leaves

1. Cut drumsticks into 1inch long pieces and brinjal in to small pieces..
2. Peel the skin from the potato and cut it into small cubes.
3. Grind coconut to a fine paste by adding little water.
4. Heat oil in a pan, add mustard seeds, urud dal and allow it to splutter.
5. Add curry leaves, chopped onions and saute till onions becomes brown colour.
6. Add tomato, chilly powder, sambar powder, turmeric powder and saute for 2-3 Min's.
7. Then add drumsticks, brinjal, potato, salt and mix well.
8. Add coconut paste and saute for 2-3 minutes.
9. Add water and cover and cook it in on medium flame.
8. Once the vegetables are half cook add tamarind paste and cook till it becomes soft.
