Rasgulla

Rasgulla is a very popular Bengali sweet. It is soft, Juicy and spongy made from milk. It is easy to make and I'm posting you the step by step procedure for making rasgulla .....

Ingredients:
½ liter Milk
½ cup sugar
1-1½ cups water
1 tsp Lemon Juice

Preparation:
1. Boil the milk in a heavy vessel.




2.Once the milk comes to boil add lemon juice and stir gently.
3. When the milk starts curdle turn off the gas.

4. Strain the milk using muslin cloth.



5. Pour some cold water and squeeze the cloth to strain the water out.The curd obtained is called chenna.




6. Remove chenna from the cloth and place them on a plate.
7. Knead chenna gently so that it is free of lumps.
8. Make small balls of equal size of the dough and keep aside.



9. Mix sugar and water in a pan and bring it to boil.



10. Add chenna balls to the syrup and cook for 15 minutes with lid partially covered.



11. Chenna dumplings will puff up.



12. Refrigerate and serve chilled.
