Pavakkai Kootu (Bitter Gourd curry)

Ingredients:
250g Pavakkai (Bitter gourd)
1 Onion, finely chopped
1-2 tomato, finely chopped
1-2 tsp Tamarind paste
2 tsp Chilly powder
1 tsp Urud dal
1/2 tsp Mustard
1-2 tsp oil
Few Curry leaves
Water

Preparation:
1. Wash and slit bitter gourd lengthwise.
2. Remove the seed and cut them into small pieces and keep it aside.
3. Heat oil in a pan, add mustard and urud dal.
4. Once the Mustard starts to splutter, add onion and saute till it becomes golden brown.
5. Add bitter gourd and saute for 3-4 minutes.
6. Add chopped tomatoes, salt, chilly powder and mix well.
7. Cover and cook it on medium flame by adding little water.
8. Once it is half cooked add tamarind paste and cook till it becomes soft and tender.
9. Serve hot with rice.
