Adhirasam

Ingredients:
250g Raw rice
300g Jaggery
½ tsp Cardamom powder
Oil for frying

Preparation:
1. Wash and soak the rice for half an hour.
2. Drain the water and spread the rice on a dry cloth an allow it to dry.
3. Once the rice is dried,grind it in mixer to a fine powder.
4. Sieve the flour and keep it aside.
5. Mix jaggery with little water and heat it low flame till it becomes thick.
6. To check the consistency ,add a drop of syrup in water it should be lump.
5. Mix the rice flour to the jaggery syrup slowly (mix well without any lumps).
6. Remove from the heat and allow it cool.
7. The dough will be similar to chapati dough.Keep it aside for 2 hours
8. Make small balls from the dough and pat it to a small circular disc on plastic sheet.
9. Heat oil in a kadai and fry them till it becomes light brown colour.
10. Remove from the oil and drain the excess of oil by placing adhirasam between two flat ladles and pressing it.
11. Allow it to cool and serve.
