Vegetable Garden Soup


Ingredients:
2 tsp Green gram dal (moong dal)
2 Large tomatoes, cut into 8 pieces
1 carrot, cut into cubes
1 tsp butter
¼ cup grated carrot
¼ cup cabbage, shredded
¼ cup tomatoes, chopped
¼ cup Spinach, finely chopped
Salt and black pepper to taste
2 tsp lemon juice

Preparation:
1. Wash and soak green gram dal for 30 minutes.
2. Pressure cook the soaked green gram dal, tomatoes, carrot with 3 cups of water till one whistle.
3. Allow it to cool, blend and strain it.
4. Heat a tsp of butter in a pan; add grated carrot, shredded cabbage, chopped tomatoes and saute for 30 seconds.
5. Add the strained tomato mixture, salt and black pepper.
6. Bring the mixture to boil and simmer it for 5 minutes.
7. Remove from the heat and add lemon juice, chopped spinach.
8. Mix well and serve hot.
