Paal kozhukattai/ Paal Kolukattai is one my favorite recipe. It is prepared with the dough made out of rice flour. Small balls are made out of the dough and steam cooked and then added to the jaggery syrup.
Ingredients
1 cup Rice flour
1½ cup Water
½ cup Jaggery (more or less according to taste)
1 tsp Oil
¼ tsp cardamom powder
Water
Salt
Preparation:
1. Heat water along with oil and bring it to boil.
2. Add rice flour and mix continuously till the water is completely absorbed.
3. Allow it to cool and make small balls from the dough.
4. Steam the rice balls (kolukattai) in idly cooker for 10-15 minutes. Keep it aside.
5. Grind the grated coconut with water and squeeze them to extract milk (first milk will be thick).
6. Grind the same coconut again for 2 times and extract the second and third milk .Keep it aside.
7. On a medium flame mix jaggery with 2nd and 3rd coconut milk and stir continuously till the jaggery is dissolved completely.
8. Add kolukattai to the jaggery syrup and cook it on medium flame for 5-7 minutes.
9. Finally add the first coconut milk, cardamom powder and mix well and remove from the heat.
10. Paal kolukattai is ready to serve.
