Vanilla Kipferl

Vanilla Kipferl is a famous Austrian Christmas time cookies. These cookies are also called as Crescent-Shaped Vanilla Cookies. The small crescent shaped, nutty butter taste cookies have a strong vanilla flavor.

Ingredients:

280g All Purpose Flour
200g butter
50g Caster sugar
100g Almonds, finely grounded
1 vanilla bean

Preparation:
1. Cut and open the vanilla bean and scrape out the pith.



2. Mix flour, almonds, caster sugar, vanilla and butter together to make soft dough.


3. Take a small portion from the dough and roll it with your hand to a finger thick roll.


4. Cut the roll into pieces of 6cm long.


5. Bend the edges of the pieces and shape it like a half moon/semicircle.



6. Grease the baking tray with the butter and sprinkle little flour over it.



7. Place the cookies about 1 inch apart.



8. Bake the cookies at 180 degrees C for 10-15 minutes/ until firm.



9. While still warm, dip the kipferl in icing sugar (Do this carefully because they tend to break easily).

1. Preheating the oven is important.

White Sauce

This is the basic white sauce recipe used in baked vegetables to give creamy thick texture and to bind in the fillings in sandwiches and rolls.

Ingredients:
1/2 liter Milk
2 tsp Butter
2 tsp All Purpose Flour (Maida)
Salt and pepper to taste

Preparation:
1. Melt butter in a heavy vessel, add flour and whisk for a minute.





2. Add milk gradually and whisk constantly until the mixture thickens.
3. Add salt, pepper and mix well.

Pasta Salad

Ingredients:
1 cup Pasta
2 tsp Egg less Mayonnaise
2 tsp Vinegar
½ cup peas, cooked
1 Carrot, finely chopped
½ cup Cauliflower, chopped (optional)
1 Onion, finely chopped
1 Tomato, finely chopped
2 tsp finely chopped fresh parsley
Salt and pepper to taste
Water

Preparation:
1. Boil enough water with little salt in a vessel.
2. Add pasta into the boiling water and cook till it is tender.
3. Drain the water and keep it aside.
4. Cook the chopped vegetables separately and keep it aside (don’t overcook it).
5. In a bowl mix cooked vegetables, paste, onion, tomato and mix well.
6. Add vinegar, salt, pepper, parsley and egg less mayonnaise to the vegetable pasta mixture and mix well.
7. Salad is ready to serve.


Note:
1. While cooking pasta you can add a tsp of oil that helps to avoid pasta sticking together.
2. Instead of cooking the vegetables you can also use them as raw.
